STORY: In 2016 we wanted to elevate our Cabernet Franc and created a Reserve tier. Being the first of its kind in the Covington family, the 2016 Reserve Cabernet Franc was fermented entirely in Spanish Clay Tinaja. These clay vessels give the wine a distinct, silky texture, aromas of cooking spices, and the benchmark herbs and black fruits. These vessels do not retain heat, so the wine ferments at a long, slow pace, building elegant tannins.
